Rice Ramen Vegetable Salad

Ingredients:

  • 2 cups shredded purple cabbage
  • 1 1/2 cups shredded carrots
  • 1 yellow pepper sliced
  • 1 red pepper sliced
  • 1 zucchini sliced or spiraled
  • 2 cups bean sprouts
  • 2 cups of rice ramen (Lotus Foods Rice Ramen is my favorite)
  • Shaved almonds

Dressing Recipe:

  • 1/2 cup creamy almond butter
  • 1/2 cup olive oil
  • 2 TBSP coconut aminos
  • Juice of 1 lemon or lime
  • 2 TBSP coconut sugar
  • 1-2 TBSP Sriracha sauce (depending how spicy you want it)
  • 1 tsp sesame oil

Instructions:

  • Cook rice ramen according to packaging and set aside
  • Slice all vegetables and combine in a large bowl
  • Mix ingredients for dressing and whisk together
  • Combine noodles and vegetables and top with dressing and mix
  • Top with shave almonds and enjoy
