Ingredients:
- 2 cups shredded purple cabbage
- 1 1/2 cups shredded carrots
- 1 yellow pepper sliced
- 1 red pepper sliced
- 1 zucchini sliced or spiraled
- 2 cups bean sprouts
- 2 cups of rice ramen (Lotus Foods Rice Ramen is my favorite)
- Shaved almonds
Dressing Recipe:
- 1/2 cup creamy almond butter
- 1/2 cup olive oil
- 2 TBSP coconut aminos
- Juice of 1 lemon or lime
- 2 TBSP coconut sugar
- 1-2 TBSP Sriracha sauce (depending how spicy you want it)
- 1 tsp sesame oil
Instructions:
- Cook rice ramen according to packaging and set aside
- Slice all vegetables and combine in a large bowl
- Mix ingredients for dressing and whisk together
- Combine noodles and vegetables and top with dressing and mix
- Top with shave almonds and enjoy
